I'm going to share with you today my favourite soup recipe ever! It's crazy yummy, very filling and also its green, so whats not to like!
We had this for dinner last night and as we were both extra hungry I made thin bacon sandwiches to go with it which tasted really good together!
So, without further ado, here goes!
Ingredients:
3 Tbsp Butter
1 Shallot or half a regular onion
2 Leeks
1 Medium Potato
1 Head of Broccoli
1 Litre of stock (vegetable or chicken, last night I half and halfed it!)
140g Blue cheese (I like to use Roquefort)
Pepper and Aromat
Recipe:
1. Chop the onion finely and put in the saucepan with 2 Tbsp butter on medium heat, let it fry for a couple of minutes while you chop up the other vegetables.
2. Add the leeks (sliced), The potato (cubed) and also any bits of the chunky broccoli stalk that you have (chopped!) Add the remaining butter.
3. Put a lid on the vegetables and let them sweat for about 5-10 minutes.
4. Prepare your stock and roughly chop up the head of the broccoli, add both to the saucepan and let it boil for about 10 minutes more, theres no exact science with it, just keep checking on the vegetables. This is when I began to prepare my bacon sandwiches, I thinly sliced a fresh loaf of bread, buttered it and used about 2-3 slices of very thin, grilled bacon (what I like to call european bacon!)
5. When your vegetables are soft, blend it! You can blend for however long you want, depending on whether you want a texture or if you want it smooth. I used a hand blender and blended whilst the soup was still in the saucepan as you're going to want to put it back on the heat!
6. Put the blended soup back on the hob and crumble the cheese into it, keep stirring until its melted and add a little pepper and aromat.
Ta-dah! And you're done! I like to serve the soup with a grinding of pepper on the top, you can also keep back some cheese and crumble it on top if you want to be extra fancy with your presentation!
