CousCous - my new favourite recipe!

Good Morning! I wanted to share a recipe I made yesterday, as it was the first time I had made it and I didn't realise how simple and yummy it was going to be! 
We were invited for a BBQ and I wanted to make a nice side dish but something low maintenance that didn't require reheating etc
I have had some couscous in the cupboard since my Dad went into a Moroccan food shop to ask for directions and felt it was only polite to buy something, he came out with a kilo bag of couscous and a kilo bag of pepper, British people would rather buy something they don't need than risk offending somebody!

Ingredients:
250g couscous
300ml stock
Lemon juice (whole lemon or squeezey lemon)
Courgette
Onion
Red Pepper
Olive Oil
Thyme, Salt, Lemon Pepper, Chilli Flakes, Aromat






























Firstly, chop up your vegetables and place them on a baking tray, drizzled with oil. Season the veg and drizzle a bit more oil on top before putting them in a preheated oven at 180 Celsius, let them roast for 15(ish) minutes, depending on how much veg you used.






























Take your dry couscous and place in a pan or bowl that you have a lid for. Pour the 300ml of stock over, mix in some thyme and lemon pepper and put the lid on. Leave for 10 minutes. After 10-15 minutes, fluff the couscous up with a fork and add lemon juice to taste.

























Mix the couscous and the vegetables in together and enjoy! This can be eaten straight away warm or can be put in the fridge and eaten cold.
